I have a serious love affair with pomegranates.  It's a little winner on the nutrition stakes! (all this horse talk is sending me a little crazy!)  And since we're all about the spring racing carnival here in Melbourne right now, you may have found yourself indulging over the week – so here's a salad to get you back on track and tick all the boxes on taste too!

This recipe is from my ebook 'Fertilise Yourself' where I share a stack of healthy, fertility-focussed foods. You can find more information here.

But now, to the recipe!

Broad bean and Pomegranate Salad

Try to use the fresh variety of broad beans. Otherwise, frozen options are available from supermarkets.

  • 1 pack broad beans
  • 1 pomegranate (seeds removed ready to be used)
  • 1 tin Persian feta
  • juice of 1 lemon
  • 3 tablespoons olive oil
  • 1 garlic clove, crushed
  • 1 bunch of mint
  • salt and pepper to taste

Combine the broad beans, pomegranate, 3/4 of the feta, and 1/2 the mint in a salad bowl. In a container, combine the lemon, garlic, oil, salt and pepper, and shake until the ingredients are combined and creamy. Pour the dressing over the salad, and toss to coat. Garnish with remaining feta and mint, and serve immediately!

I've pulled a delicious healthy recipe from my archives for you, to get you ready and primed for our upcoming cleanse!

But first, about the cleanse… I'm excited – the team at Seathrustudio (who also did my Fertilise Yourself ebook, as an aside!) have redesigned the PDF we were using, so it all looks fresh and new – much like you'll look after completing the cleanse!

 

This cleanse is designed to show you just how good it feels to get clean and healthy – especially in spring.  Spring is the perfect time as the cycle of life goes about cleaning and cleansing purposely in this season.  My gentle body cleanse is based on alkaline principles, aiming to wash away the toxins that build up within.  The PDF not only has all the rules, it explains more about why we do this, it outlines exactly what you need to do, lists the foods we will be eating as well as recipes.  It's the perfect cleanse outline.

 

The cleanse is set to start October 22nd for 5 days.

Anybody can do it – you don't need anything special.  Just a little will power and an open mind to the possibilities that come with cleansing!  It really is good for you – body heart and soul… AND fertility!  There a little more info here.

shiitake and barley soup

  • 8 dried shiitake mushrooms

  • 1tbs oil/coconut oil

  • 4 spring onions chopped

  • 2 garlic cloves crushed

  • 1 celery stick, diced

  • 1 carrot, diced

  • 250g fresh shiitake mushrooms chopped

  • 2lt of veggie stock

  • 200gm of pearl barley

Place dried mushrooms in a bowl with hot water. Soak for 30 minutes. Once soaked, squeeze out the liquid from the mushrooms and slice thinly.

Heat oil in a pan over a medium heat. Add spring onions, garlic, celery, carrot and fresh mushrooms. Cook for a few minutes, stirring, until softened. Add stock and barley and 125ml of water and bring to the boil. Reduce heat and summer for about 40 minutes, until the barley is tender.

Plate up and enjoy!

Wa-ay back when (a couple of months ago but it feels like a lifetime ago!), after I released Fertilise Yourself, I was lucky enough to be interviewed by the wonderful Pinky McKay.  I was tickled pink (haha boom!) for the opportunity to share with her just why the principles I reveal in the book surrounding fertile eating are applicable to all – those wanting to conceive, pregnant mothers, breastfeeding mothers and well… everybody actually!  We talked about nutrition for new mums and why that's just so vital for both their physical and emotional health – plus how you can make awesome breast milk too.

I'm a huge fan of Pinky's.  Take a listen – you might not have children yet nor be thinking about having them, but there is certainly something in this for everybody!

Good Food Friday: yoghurt with stewed fruits

Your breakfast sets the tone for your day, and eating well is one of the best things you can do. For ALL of yourself!

When you start with poor sugary cereals, your sugar levels peak and then plummet shortly after, as does your energy. You then start craving sugar. Soon after, the same thing happens again, and goes on all day. Meaning that your sugar levels are up and down like a clown on a pogo stick. It's for this reason that we benefit most from starting our day well.

Yoghurt and stewed fruit

Fruit is super easy to stew.
Simply remove the peel or rind, roughly chop, add 1/4 cup of water, and stew until soft. You can stew almost anything, and use a combination of fruits to spice things up. I love stewed apples. Rhubarb is delicious too, especially when pear is added, as the sweet and sour flavours combine well. You can also warm up prunes for a delectable treat.
Ad some granola and yoghurt, and you have a treat worth sharing!

 

 

 

 

Hello lunch!

 

I've just finished up 3 weeks work full-time.  Hear that noise?  It's me slumping into a chair because I'd be telling fibs if I said I wasn't tired.  I'm really tired, but I had a few helpers to get me through – and at the top of my list of little elves were the team from Eat Fit Food and their 5 day cleanse!  You might have seen a few pics of mine pop up on instagram.  I've been loving and singing Eat Fit Food's praises all week because quite honestly – they took a lot of my stress load for the week.

Good Food Friday – my chocolate mousse!

I wanted to share my chocolate mousse recipe this week – have had a hankering for it, so I'm looking to spread the love!! It's super easy, and a great little treat for the weekend!

Chocolate mousse

vegan : gluten free : serves 4

·      200g silken tofu

·      250g vegan chocolate, melted

·      2 tsp pure maple syrup

·      2 tsp peanut butter

·      grated chocolate

Blend all ingredients until just smooth, be careful not to overmix. Pour into jelly moulds, small dishes or glasses and garnish with grated chocolate.

Refrigerate for a few hours until set.
